Why something like an infrared TV remote display when viewed through a digital camera?

I do not know why I did it, but I pointed a remote at a digital camera and the light of the remote is visible. Why does it appear on a digicam? And because infrared is displayed on a digital camera, does that mean if I had a strong enough infrared source I could shoot in complete darkness with a simple digicam and no flash?

The light appears, because the lens of the camera functionality it has to use the infrared spectrum. Usually the software will do things that can not be seen with the naked eye in the spectrum. Yes, you can use create an infrared source to shoot in complete darkness, but I suggest they are not really strong. Many camcorders have infrared LED's that you can enable in the dark and see by the camera.
